Brown Rice Stuffed Bell Pepper:
- Whole Bell Pepper any color your Prefer.
- Cheese of your Choice, I used Monterrey Jack.
- Cooked Brown Rice.
- Half an Avocado.
- Two Mushrooms cut into small pieces.
Cut the top off the bell pepper and empty the pepper. Put onto baking sheet and lightly drizzle olive oil on it. Sprinkle some salt and pepper into the pepper. Put into oven and bake for 10 Minutes at 350 degrees.
Once bell pepper is cooked fill with Cheese, Mushrooms, Rice, and top it with the avocado. The avocado should be spread across the top to act like the top of the pepper. Then sprinkle cheese and if wanted, some more mushrooms.
Put pepper back in the oven, broil for 3-5 minutes until cheese is melted. Let the pepper cool. Garnish with chopped Cilantro. If you have extra brown rice this will make a great side dish. I put some of my homemade guacamole on top (I’ll put that recipe on here soon) with some more cilantro.
